Kill 'Sent from my iPhone' and put something professional in its place — in Apple Mail and the Gmail app.
The Gmail app has a separate Signature settings (app Settings → your account) — plain text only. The better approach: set your rich signature once at gmail.com on desktop (or with one-click install); Gmail sends it with mail from web and most clients, and keep the app's mobile signature off so you don't send a downgraded version.
iOS Mail supports basic rich text but strips complex HTML layouts on paste. If your signature has a logo, columns or buttons, it will survive as a simplified version. For a signature that stays intact, the reliable pattern is: rich signature installed at the mail-provider level (Gmail settings), mobile app signature disabled.
iPhone signatures for Apple Mail live in the system Settings app rather than inside Mail itself — Settings › Mail › Signature, near the bottom. If you have more than one mail account you get a choice between All Accounts and Per Account; choosing per account is what lets a work signature send from the work address and nothing embarrassing from the personal one. This is also where you remove “Sent from my iPhone”: it is simply the default text in that box, so clearing or replacing it is all that is required.
The signature field on iOS is deliberately limited. Typed text supports only basic formatting, and while pasting rich content sometimes carries styling across, it is inconsistent between iOS versions and frequently degrades — images in particular tend to disappear, arrive as attachments, or survive on the phone and break for recipients. The reliable approach on mobile is therefore a short plain-text signature (name, role, phone, site) and a full branded HTML signature on desktop. If you genuinely need identical branding on mobile, the practical route is sending through the Gmail app with a desktop-set signature on a Google account, or accepting a plain mobile version — chasing pixel parity on iOS costs more time than it returns.
If you use the Gmail app rather than Apple Mail, the iOS Settings path does nothing for it. Gmail's app keeps its own mobile signature inside the app (menu › Settings › the account), and it is plain text only. It also overrides — rather than appends to — the rich signature you set on Gmail's web interface, which is why messages sent from the phone look plain even when the desktop signature is perfect. Setting the mobile signature to a single line, or clearing it so the web signature applies where possible, is usually the cleanest outcome. The desktop side is covered in adding a signature in Gmail.
